Deboning & Trimming

All of our deboning and trimming solutions can be customised to suit your unique product specification, process, throughput and trimming requirements. With built-in, real-time data monitoring of yield, operator efficiency and giveaway, managers are able to see live reports on key performance indicators during each production process. This allows managers to quickly take preventative action, if required, to ensure the process targets are being achieved, and monitor any corrective action, to ensure the changes are effective.

By introducing pace deboning, a streamlined boning and trimming process, you can save up to 30% on processing time in comparison with traditional table boning.  When the meat is dropped from the overhead rail, it is transported through the boning hall on a conveyor system whilst each operator performs a specific task in the deboning process as the meat passes them. This method of deboning spreads the workload equally and as each operator consistently performs the same process, it is possible to achieve more efficient, uniform deboning with less qualified personnel.

The consistent throughput time per product on the processing lines contributes to greater food safety, as the products can be efficiently processed and packed before returning to the dispatch chill. This process eliminates large volumes of product arriving in the packing area at one time, instead, ensuring a consistent feed of product from the processing lines.

All cuts are traceable down to the batch and operator. Yield, throughput and quality are registered and monitored online.

Trim Management

More Information on reducing lean give-away

Trim from the deboning and trimming process is usually further processed for convenience products. Before being sent to meat preparation for processing into sausages or burger products, the trim passes through the SF Trim Management System for a real-time, accurate measurement of chemical lean (CL) content. In doing so the product is simultaneously checked for foreign body contamination including bone.

Based on the CL analysis, the trim meat is automatically sorted and batched according to the required specifications for grinding and mixing.

The SF Trim Management System:

Portion Cutting

SF offers portion-cutting solutions for the high-speed production of fixed weight or fixed thickness boneless products.

The PORTIO is a high-precision yet economic portion cutting machine suited to fresh meat. It offers the highest quality of the cut, accuracy, capacity and obtained yields gains which have consistently proven to offer our customers a fast return on investment.

Solutions that we recommend for the red meat industry include:

  • PORTIO B – Bone-in portioning machine for pork or lamb loins with bones to a fixed weight.
  • PORTIO 3 – With two lateral cameras it is used for accurate portioning of red meat or any product with an irregular shape, in a vertical way. 
  • PORTIO 3-300 – For the larger pieces of meat that exceed the width of 240 mm, The infeed consists of two separate infeed conveyors to reduce the impact of placing a heavier piece of meat while still scanning the previous piece.
  • PORTIO 3D – Is a dual-lane machine featuring 2 x 300mm belts and lateral cameras for optimum scanning precision. It is designed to comply with the demand for high capacities in the meat processing industry.

Our Recipe Formulation solutions uses CL (chemical Lean) data to build precise fat/lean ratio recipes before further processing.  The solutions can be tailored to either a simple manual system or a more complex system that automatically builds the recipe from a series of inputs.

Multihead Weighing & Distribution

Multihead weighers are pivotal in the improvement of efficiency on a production line offering fast, accurate weighments of product into bags or trays.
